Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter chilled and cut into cubes
  • 3/4 cup buttermilk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour for gravy
  • 4 cups whole milk
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional

Instructions

  • Preheat your oven to 450°F (230°C).
  • In a large mixing bowl, combine the flour, baking powder, and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Pour in the buttermilk and stir until just combined.
  • Turn the dough out onto a floured surface and knead gently.
  • Roll out the dough to about 1 inch thick and cut into biscuits.
  • Place the biscuits on a baking sheet and bake for 12-15 minutes until golden brown.
  • In a skillet, cook the breakfast sausage over medium heat until browned and crumbled.
  • Sprinkle the additional flour over the browned sausage and stir to combine.
  • Gradually whisk in the milk, stirring constantly until the mixture thickens.
  • Season the gravy with black pepper and cayenne (if using).
  • Serve the biscuits warm, topped generously with sausage gravy.
