Cook chicken breasts for 5-7 minutes on each side, until golden brown and cooked through.
Remove the chicken and set aside, keeping it warm.
In the same skillet, add diced onion and cook for 4-5 minutes until translucent.
Add minced garlic and fresh thyme, sauté for 1-2 minutes until fragrant.
Stir in fresh cranberries, orange zest, and juice along with honey.
Return the chicken to the skillet, coating it in the sauce. Simmer for 5 minutes.
Taste and adjust seasoning if necessary before serving.
