Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup fresh cranberries
  • 1 orange zest and juice
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • 1 tablespoon honey

Instructions

  • Heat olive oil in a skillet over medium-high heat.
  • Season chicken breasts with salt and pepper, then add to the skillet.
  • Cook chicken breasts for 5-7 minutes on each side, until golden brown and cooked through.
  • Remove the chicken and set aside, keeping it warm.
  • In the same skillet, add diced onion and cook for 4-5 minutes until translucent.

  • Stir in fresh cranberries, orange zest, and juice along with honey.
  • Return the chicken to the skillet, coating it in the sauce. Simmer for 5 minutes.
