Prepare a dredging station with flour, beaten eggs, and breadcrumbs.
Combine flour, garlic powder, paprika, salt, and pepper in a bowl.
Coat each chicken tender first in the seasoned flour, then dip into the eggs, and finally coat with breadcrumbs.
If baking, place the chicken sticks on a lined baking sheet and drizzle with olive oil; if frying, heat the oil in a skillet.
Bake in the oven for 20-25 minutes or fry until golden brown and cooked through.
Remove from the oven or pan and toss in Buffalo sauce.
Serve immediately with your favorite dipping sauce, if desired.
