Ingredients

  • 4 boneless skinless chicken breasts

  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Preheat the oven to 400°F (200°C).
  • Prepare the baking sheet by lining it with parchment paper or lightly greasing it.
  • In a shallow bowl, whisk together the eggs, garlic powder, Italian seasoning, salt, and pepper.
  • In a separate bowl, combine the breadcrumbs and grated Parmesan cheese evenly.
  • Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat thoroughly in the breadcrumb mixture.
  • Place the coated chicken breasts on the prepared baking sheet, spacing them apart for even cooking.
  • Toss the colorful veggies in a bowl with olive oil, salt, and pepper before arranging them around the chicken on the baking sheet.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
