Ingredients

  • 4 chicken thighs bone-in and skin-on
  • 1 cup apple cider
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken thighs dry and season with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add the chicken thighs, skin side down, and sear for 5–7 minutes until golden brown.
  • Flip the chicken and cook for an additional 5 minutes.
  • In a small bowl, whisk together apple cider, Dijon mustard, honey, and thyme.
  • Pour the apple cider mixture over the chicken in the skillet.
  • Transfer the skillet to the preheated oven and roast for 30 minutes.
  • Check the chicken for doneness (internal temperature should reach 165°F).
  • Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.
