Ingredients

  • 2 cups cooked chicken shredded
  • 8 small corn tortillas
  • 1 cup salsa
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 1 can black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine shredded chicken, salsa, black beans, corn, cumin, chili powder, salt, and pepper.
  • Spread a thin layer of the chicken mixture in a greased baking dish.
  • Layer four tortillas over the chicken mixture, followed by another layer of the chicken mixture and one cup of shredded cheese.
  • Repeat the previous step, finishing with a final layer of tortillas and the remaining cheese on top.
  • Cover the dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  • Let the casserole cool for a few minutes before serving.
