Ingredients

  • 2 medium zucchini
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs panko recommended
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  • Preheat your oven to 425°F (220°C).
  • Slice the zucchini into thin rounds, about 1/4 inch thick.
  • In a bowl, combine the grated Parmesan, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Spread the zucchini slices on a baking sheet lined with parchment paper.
  • Spray the zucchini slices lightly with olive oil.
  • Coat each zucchini slice with the Parmesan breadcrumb mixture, pressing gently to adhere.
  • Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
