Ingredients

  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup mini chocolate chips
  • Powdered sugar for dusting

Instructions

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  • Add the vanilla extract and peppermint extract to the creamed mixture and blend well.
  • In a separate bowl, whisk together the flour and baking powder until combined.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  • Fold in the mini chocolate chips using a spatula until evenly distributed.
  • Scoop tablespoons of dough and roll them into balls, then place them on the prepared baking sheets.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • Once cooled, dust the cookies generously with powdered sugar for a snowy finish.
