Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ricotta cheese and granulated sugar, mixing until smooth.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, orange zest, and orange juice.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry mixture to the wet mixture, stirring until just combined.
Line a baking sheet with parchment paper. Using a cookie scoop or spoon, drop heaping tablespoons of dough onto the sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, dust the cookies with powdered sugar before serving.
