Ingredients

  • 2 cups cherry tomatoes
  • 8 oz feta cheese
  • 8 oz pasta penne or fusilli
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon red pepper flakes optional
  • 1/4 cup fresh basil chopped
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, combine cherry tomatoes, feta cheese, olive oil, garlic, and red pepper flakes.
  • Season with salt and pepper, then toss to combine everything evenly.
  • Roast in the preheated oven for about 30 minutes, or until the tomatoes burst.
  • While the tomatoes are roasting, cook the pasta according to package instructions until al dente.
  • Once the tomatoes are roasted, remove from the oven and mash slightly with a fork.
  • Add the cooked pasta to the baking dish, mixing well to combine with the sauce.
  • Stir in the fresh basil just before serving.
