Ingredients

  • 1 lb Boneless Skinless Chicken Thighs
  • 1 cup Artichoke Hearts canned or frozen
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Mozzarella Cheese shredded
  • 1/4 cup Grated Parmesan Cheese
  • 3 cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • 1 tablespoon Olive Oil
  • Juice of 1 Lemon
  • Salt and Pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  • Season chicken with salt, pepper, oregano, and lemon juice, coating well.
  • Stir in the artichoke hearts and cherry tomatoes, mixing well.
  • Layer the chicken mixture into a baking dish and top with mozzarella and Parmesan cheeses.
  • Bake in the preheated oven for 20–25 minutes or until the cheese is bubbling and golden brown.
  • Remove from oven and let cool for a few minutes before serving.

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven for best results to maintain that delicious cheesy top.
