  • 2 pounds beef chuck roast cut into cubes

  • 8 ounces mushrooms sliced
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 tablespoon cornstarch optional, for thickening
  • Salt and pepper to taste
  • 1 cup sour cream
  • Parsley chopped (for garnish)

Instructions

  • Prepare the beef by cutting it into cubes.
  • Chop the onion and slice the mushrooms.
  • Sear the beef in a hot skillet (optional).
  • Layer the beef, onions, and mushrooms in the slow cooker.
  • Add garlic, beef broth, Worcestershire sauce, and mustard.
  • Season with salt and pepper.
  • Cover and cook on low for 8 hours.
