- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes halved
- 1 cucumber diced
- 1/2 red onion finely chopped
- 1 bell pepper diced
- 1/2 cup Kalamata olives pitted and halved
- 1/4 cup feta cheese crumbled (optional)
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Rinse the quinoa under cold water.
Cook the quinoa in water.
Let the quinoa cool.
Prepare the vegetables.
Make the dressing by whisking olive oil, red wine vinegar, oregano, salt, and pepper.
Combine quinoa and vegetabels in a large bowl.
Add the dressing and mix gently.
Top with feta cheese and parsley.
Serve immediately or chill briefly before serving.
