Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1 bell pepper diced
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup feta cheese crumbled (optional)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • Rinse the quinoa under cold water.
  • Cook the quinoa in water.
  • Let the quinoa cool.
  • Prepare the vegetables.
  • Make the dressing by whisking olive oil, red wine vinegar, oregano, salt, and pepper.
  • Combine quinoa and vegetabels in a large bowl.
  • Add the dressing and mix gently.
  • Top with feta cheese and parsley.
  • Serve immediately or chill briefly before serving.
