Ingredients

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup honey or maple syrup
  • 2 pounds potatoes peeled and chopped
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste for mashed potatoes

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, mix the olive oil, minced garlic, oregano, thyme, salt, black pepper, and honey/maple syrup.
  • Add the chicken breasts to the bowl and coat thoroughly with the glaze mixture.
  • Place the glazed chicken on a baking sheet and bake for 25-30 minutes until cooked through.
  • While the chicken bakes, prepare the potatoes by boiling them in salted water until tender.
  • Drain the potatoes and return them to the pot to dry out for a minute.
  • Add the milk and butter to the potatoes, then mash until smooth.
  • Season mashed potatoes with salt and pepper to taste.
  • Once chicken is done baking, let it rest for a few minutes before slicing.
