Hearty Butternut Squash Casserole for Family Meals

Butternut Squash Casserole made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients

  • 2 medium butternut squashes peeled and cubed
  • 1 cup onion finely chopped
  • 3 cloves garlic minced
  • 1 cup cooked quinoa
  • 1 cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheese Cheddar or Gruyère
  • ½ cup breadcrumbs
  • 2 tablespoons olive oil

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat and sauté the onions until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • In a large bowl, combine the cubed butternut squash, sautéed onions and garlic, cooked quinoa, salt, pepper, and heavy cream.
  • Transfer the mixture into a greased casserole dish and spread it evenly.
  • Top with shredded cheese and breadcrumbs.
  • Bake in the preheated oven for 30–35 minutes, until the cheese is melted and the top is golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.
