Using a small cookie scoop or your hands, form balls of the mixture and place them on the prepared baking sheets.
Bake for 25-30 minutes, or until the tops are lightly golden.
While the macaroons cool, melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
Once the macaroons have cooled completely, dip the bottoms in melted chocolate and place them on a wire rack to set.
