Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the softened butter and granulated sugar, then cream until light and fluffy.
  • Add the egg and vanilla extract to the mixture, then mix until fully combined.
  • Gradually mix in the flour and salt until just combined to form the dough.
  • Press the cookie dough into the bottom of a greased 9-inch springform pan, creating an even layer.
  • In another bowl, beat the softened cream cheese until smooth and creamy.
  • Add powdered sugar, lemon juice, and salt to the cream cheese, mixing until fully combined and smooth.
  • Spread the cream cheese mixture over the cooled crust in the springform pan.
  • Bake in the preheated oven for 40-45 minutes, or until the edges are set and the center slightly jiggles.
  • Remove from the oven and cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before serving.
