- 1 whole chicken about 4-5 lbs
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 lemon sliced
- 4 cloves garlic smashed
- 4 medium potatoes chopped
- 2 cups seasonal vegetables carrots, bell peppers, zucchini
Preheat your oven to 425°F (220°C).
Prepare the chicken by patting it dry and seasoning it.
Rub the chicken with olive oil and place lemon slices and garlic inside the cavity.
