Ingredients

  • 1 whole chicken about 4-5 lbs
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 lemon sliced
  • 4 cloves garlic smashed
  • 4 medium potatoes chopped
  • 2 cups seasonal vegetables carrots, bell peppers, zucchini

Instructions

  • Preheat your oven to 425°F (220°C).
  • Prepare the chicken by patting it dry and seasoning it.
  • Rub the chicken with olive oil and place lemon slices and garlic inside the cavity.
  • Arrange chopped potatoes and seasonal vegetables in a large roasting pan.
  • Position the chicken on top of the vegetables.
