Ingredients

  • 4 chicken thighs boneless and skinless
  • 1 cup long-grain white rice
  • 2 cups chicken broth low-sodium
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 lemon zested and juiced
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste

Instructions

  • Heat a tablespoon of olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 4-5 minutes.
  • Stir in minced garlic and sauté for 1 more minute until fragrant.
  • Add the chicken thighs to the pot, cooking until browned, about 5-7 minutes per side.
  • Once browned, stir in the rice, zested lemon, thyme, and season with salt and pepper.
  • Pour in the chicken broth and bring to a boil, then reduce to a simmer. Cover and cook for 20 minutes.
  • After 20 minutes, remove from heat, fluff with a fork, and fold in parsley and lemon juice.
  • Serve warm, garnished with extra parsley and lemon wedges if desired.

Notes

This dish can be stored in the fridge for up to 3 days. Reheats beautifully on the stove or in the microwave, making it perfect for meal prep.
