In a large bowl, mix together the peanut butter, granulated sugar, and brown sugar until creamy.
Add the eggs one at a time, mixing well after each addition.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually mix the dry ingredients into the wet mixture until just combined.
Scoop tablespoon-sized balls of dough and roll them in granulated sugar before placing on a baking sheet lined with parchment paper.
Bake in the preheated oven for 8-10 minutes until the edges are set but the centers are still soft.
Immediately press a chocolate kiss into the center of each cookie after removing from the oven.
Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
