Ingredients

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 2 large eggs
  • 1 avocado
  • Fresh herbs like cilantro or chives

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash and scrub the sweet potatoes thoroughly.
  • Pierce the sweet potatoes with a fork and rub with olive oil, cinnamon, and salt.
  • Place sweet potatoes on a baking sheet and roast for about 45 minutes.
  • While sweet potatoes are roasting, prepare soft-boiled eggs.
  • To soft boil, bring a pot of water to a boil, gently add eggs, and cook for about 6-7 minutes.
  • Remove eggs and immerse in ice water to stop the cooking process.
  • Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
  • Top each sweet potato with sliced avocado, a soft-boiled egg, and garnish with fresh herbs.
  • Season to taste and serve immediately.
