Preheat the oven to 400°F (200°C).
Wash and scrub the sweet potatoes thoroughly.
Pierce the sweet potatoes with a fork and rub with olive oil, cinnamon, and salt.
Place sweet potatoes on a baking sheet and roast for about 45 minutes.
While sweet potatoes are roasting, prepare soft-boiled eggs.
To soft boil, bring a pot of water to a boil, gently add eggs, and cook for about 6-7 minutes.
Remove eggs and immerse in ice water to stop the cooking process.
Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
Top each sweet potato with sliced avocado, a soft-boiled egg, and garnish with fresh herbs.
Season to taste and serve immediately.
