Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1 cup long-grain white rice
  • 4 cups fresh spinach
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups chicken broth

Instructions

  • Heat the skillet over medium heat and melt the butter.
  • Add minced garlic to the skillet and sauté until fragrant, about 30 seconds.
  • Season the chicken thighs with salt, pepper, and paprika and add them to the skillet.
  • Cook the chicken for about 5-7 minutes on each side until golden brown and cooked through.
  • Stir in the rice, followed by the chicken broth, and bring to a gentle boil.
  • Reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked through.
  • Just before serving, stir in the fresh spinach and let it wilt for 2-3 minutes.
  • Taste and adjust seasoning before serving.

Notes

For optimal flavor, let the chicken marinate in spices for 30 minutes before cooking. Leftovers can easily be reheated on the stove or in a microwave for a quick meal.
