Ingredients

  • 8 oz pasta fettuccine or penne
  • 2 boneless skinless chicken breasts (about 1 lb)
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Cook the pasta according to package instructions until al dente, then drain and set aside.
  • In a large skillet, heat the olive oil over medium heat and add the chicken breasts.
  • Season both sides of the chicken with salt and pepper as it cooks for about 6-7 minutes per side, until fully cooked through.
  • Remove the chicken from the skillet and let it rest, then slice it into strips.
  • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream, stirring to combine, then bring to a simmer.
  • Stir in the grated Parmesan cheese until melted and the sauce thickens, about 3-5 minutes.
  • Toss the cooked pasta and sliced chicken into the sauce, mixing well to coat evenly.
  • Serve hot, garnished with fresh parsley as desired.
