Savory Meatloaf Cups for Cozy Weeknight Meals

Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup ketchup

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, Worcestershire sauce, chopped onion, minced garlic, oregano, salt, and pepper.
  • Scoop the mixture into a greased muffin tin, filling each cup about 3/4 full.
  • Spread a spoonful of ketchup over the top of each meatloaf cup.
  • Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 160°F (70°C).
  • Remove the meatloaf cups from the oven and let them rest for a few minutes before serving.
