Preheat your oven to 400°F (200°C).
In a large bowl, combine honey, minced garlic, soy sauce, olive oil, and a pinch of salt and pepper.
Add the chicken thighs to the marinade and coat them well, then let them sit for about 10 minutes.
In a rimmed baking dish, arrange the carrots, broccoli, and bell pepper.
Place the marinated chicken thighs on top of the vegetables, skin side up.
Pour any remaining marinade over the chicken and vegetables.
Bake in the preheated oven for about 30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Remove from the oven and let it rest for 5 minutes before serving.
