Ingredients

  • 4 chicken thighs bone-in and skin-on
  • 2 tablespoons honey
  • 4 cloves garlic minced
  • 1 cup carrots sliced
  • 1 cup broccoli florets
  • 1 bell pepper diced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine honey, minced garlic, soy sauce, olive oil, and a pinch of salt and pepper.
  • Add the chicken thighs to the marinade and coat them well, then let them sit for about 10 minutes.
  • In a rimmed baking dish, arrange the carrots, broccoli, and bell pepper.
  • Place the marinated chicken thighs on top of the vegetables, skin side up.
  • Pour any remaining marinade over the chicken and vegetables.
  • Bake in the preheated oven for about 30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from the oven and let it rest for 5 minutes before serving.
