Preheat the oven to 375°F (190°C).
In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and celery; sauté until softened, about 4-5 minutes.
Add the minced garlic and cook for another minute until fragrant. Remove from heat and let cool slightly.
In a large mixing bowl, combine the ground turkey, cooled onion, celery, and garlic mixture, bread crumbs, chopped cranberries, parsley, thyme, salt, and pepper. Mix until well combined.
Add the beaten egg and chicken broth to the mixture; stir until just combined. The mixture should be moist but not too wet.
Shape the mixture into 1- to 1.5-inch balls and place them on a baking sheet lined with parchment paper.
Bake in the preheated oven for 25-30 minutes, or until the balls are golden brown and cooked through.
Remove from the oven and let cool for a few minutes before serving. Garnish with additional parsley if desired.
