Ingredients

  • 1 pound ground turkey
  • 2 cups bread crumbs
  • 1 cup fresh cranberries chopped
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup celery finely chopped
  • 1/4 cup fresh parsley chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg beaten
  • 1/4 cup chicken broth

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and celery; sauté until softened, about 4-5 minutes.
  • Add the minced garlic and cook for another minute until fragrant. Remove from heat and let cool slightly.
  • In a large mixing bowl, combine the ground turkey, cooled onion, celery, and garlic mixture, bread crumbs, chopped cranberries, parsley, thyme, salt, and pepper. Mix until well combined.
  • Add the beaten egg and chicken broth to the mixture; stir until just combined. The mixture should be moist but not too wet.
  • Shape the mixture into 1- to 1.5-inch balls and place them on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 25-30 minutes, or until the balls are golden brown and cooked through.
  • Remove from the oven and let cool for a few minutes before serving. Garnish with additional parsley if desired.
