Preheat your oven to 375°F (190°C).
In a large skillet, heat a tablespoon of oil over medium heat. Add chopped onions and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute before removing from heat.
In a large mixing bowl, combine the bread crumbs, ground turkey, cooked onion and garlic mixture, thyme, sage, salt, and pepper.
Add the vegetable broth gradually, mixing until the mixture is moistened but not too wet. You may not need all the broth.
Beat the egg in a small bowl, then add it to the mixture.
Form the mixture into balls about 1½ inches in diameter and place them on a baking sheet lined with parchment paper.
Bake the stuffing balls for 25-30 minutes or until they are golden brown and cooked through.
Remove from the oven and let them cool for a few minutes before serving.
