Ingredients

  • 1 lb boneless chicken thighs
  • 1/4 cup honey
  • 2 limes juiced and zested
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup diced fresh pineapple
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño seeded and minced

Instructions

  • Prepare the marinade by whisking together honey, lime juice, lime zest, olive oil, cumin, salt, and pepper in a bowl.
  • Cut the chicken thighs into even pieces and add them to the marinade, ensuring they're fully coated. Let them marinate for at least 30 minutes.
  • While the chicken marinates, make the pineapple salsa by combining diced pineapple, red onion, cilantro, lime juice, and jalapeño in a bowl.
  • Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers, taking care to leave a bit of space between pieces.
  • Grill the skewers for about 10-12 minutes, turning occasionally, until charred and cooked through.
  • Serve the grilled chicken skewers hot, topped with a generous spoonful of pineapple salsa.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The salsa is best served fresh, but can also be stored for up to 2 days for an easy snack.
